About this work
Catering is the hardest uniform brief in hospitality. Team size changes every week, many staff are casual hires, the venue is new every time and there is no laundry room at the end of the night. We choose fabrics that shake out creases after travelling in a crate and colours that do not show water marks.

Good to know
A white or light shirt with dark trousers and a waistcoat is the long-standing banquet standard. Many caterers now use a branded coloured shirt with a waistcoat to stand apart from the venue's own staff.
At least 25 to 30 percent spares. Catering teams grow with event size, use casual staff and work away from a laundry, so garments are unavailable more often than in a restaurant.
Supply the two layers guests notice, the shirt and the waistcoat or apron, and set a written rule for the rest, such as black formal trousers and closed black shoes.
