Restaurant Merchandise That Actually Sells (And What Just Sits There)

Every restaurant that has tried merchandise has a box of unsold items somewhere. Usually the difference between the box and the sold-out shelf is a single decision: whether the item is a product with a logo, or a logo with a product attached.

What sells

  • Tote bags. The most reliable seller. Useful, cheap to produce, and effectively a moving billboard once it leaves. Heavy canvas outsells thin cotton by a distance.
  • Caps. Wearable, one size, high margin, and staff wear them too, which is free display.
  • Hoodies and sweatshirts. The highest revenue per unit. If your team already wears one, guests will ask.
  • Mugs and enamelware. Strong with regulars, especially for coffee-led brands. Enamelware photographs better and lasts longer than ceramic.
  • Oversized tees. Currently the strongest-selling garment for cafes and dessert brands.

What tends to sit

Keychains and fridge magnets sell as impulse buys at the till but rarely earn shelf space on their own. Notebooks sell if the design is good and not otherwise. Anything with a large centred logo and no other design intent sells poorly at every price point. Branded water bottles do well as gifting and poorly as retail.

Design the thing you would buy if it had no logo on it. Then put the logo on it small.

Placement and pricing

Merchandise sells where people wait: the till, the entrance, beside the coffee machine. It does not sell from a back shelf or a menu insert. Fold, do not hang, and keep the display small and full rather than large and sparse.

Price it as a product. A tote that costs a fraction of a main course sells to people who came for lunch; one priced like a main course sells to almost nobody. The goal is brand distribution with a healthy margin, not a second business.

Gifting and events

Beyond retail, merchandise does real work as festive gifting for regulars, launch kits for press and influencers, and event giveaways. Diwali tote hampers for loyal diners are among our most repeated annual orders, and they cost less than most advertising with a considerably longer tail.

Start small and test

Produce one strong item in a small run rather than five items in large runs. Totes and caps are the safest first test. If they move, add a hoodie for winter and a mug for the regulars. We produce merchandise from modest quantities specifically so brands can test before committing.

Should merchandise carry a big logo?

Usually not. The items that sell carry a design people would wear anyway, with the brand as a small detail. A large logo turns a product into an advertisement, and guests rarely pay for advertisements.

How should merchandise be priced?

Price it as a product, not as a souvenir. Aim for a margin comparable to a mid-range menu item and a price point a regular does not need to think about. Overpriced merchandise sits on the shelf and quietly signals that the brand overcharges.
